Vickie's "Hey, I Like Apple Pie" Pie
It's fall and the leaves are changing. The local farmers market is jammed packed with this summer's harvest. Traditional Lattice WorkComplete with pumpkins and apples, corn and more. It's the season for baking. I don't like apple pie, but I had a craving to bake one. So I undertook a little research and realized the reason I don't like apple pie is because they're traditionally made with bitter (GrannySmith) apples. Now I'm much more of a Red Delicious kind of person, so I undertook making my recipe with apples I like. And to my surprise, I like apple pie!
 
Total preparation time: 1 hour. Cooking time 50 minutes. 15 minutes for cooling.
 
The Crust:
This recipe calls for a two-crust pie. One crust for the pie, and one on top to seal it off.

The Pie Filing:
Ingredients:Leaf hole topping
  • 2/3 cups sugar
  • ¼ cup all-purpose flour
  • ½ tsp ground cinnamon
  • ½ tspn ground nutmeg
  • dash of salt
  • 6-7 thinly sliced peeled apples
  • 3 tblspn margarine
 
Directions:
  • Pre-heat oven 425°
  • Mix sugar, flour, cinnamon, nutmeg and salt in large bowl.
  • Stir in apple slices and mix to cover with dry mixture.
  • Spoon into pie dish. Arrange apples to fully cover the dish.
  • Spoon melted margarine over the apple filling.
     
  • Cover with pie pastry top.
  • Cover pie with aluminum foil to prevent excessive browning and bake for 45 minutes.
  • Remove foil and bake for another 10 to 15 minutes, or until crust is brown and juice begins to bubble through slits in crust.
 
To Serve:
  • Serve warm with your favorite topping.
